That Chocolate Fix

Flourless, Avocado, Dark Chocolate Chunk Cookies

Today I whipped up some of the simplest and most creative cookies.  I was needing some dark chocolate in a bad way, and boy, did these fit the bill!

The original recipe is from Josefine at The Smoothie Lover, and she must have a special place in heaven for coming up with the idea of using avocado and eliminating the flour!

These are very chocolatey and are like a soft, cake-cookie hybrid. Yum!




Preheat the oven to 350 degrees.  Then, combine 1 small avocado (or about half of a large one) with 1/3 cup of the thickest honey you've got.  Mix it up real good--it should look pretty gross.





Add an egg.




Add a half-cup of dark cocoa powder and some dark chocolate chunks.  (You should probably sample a few of the chunks first--quality control, right?)



Dissolve a half-teaspoon of baking soda in 1 Tablespoon of water and add it to the batter.  Mix it up.




I liked Josefine's two-spoon method to dollop the batter onto a baking sheet.  She used parchment paper, and I used foil (that's just what we had).



Flatten them out a little bit with the back of the spoon.



Pop them in the oven for about 8 minutes.  Proceed to licking up all of the delicious batter (which definitely has raw eggs and I heard those are bad so of course I didn't do that... nope... didn't lick the spoons... or the bowl... not a bit.)

(Not burned, I swear!  I think that's just what anti-oxidants and love look like when they're warm.)

I had to shovel these off the pan a little bit --I might recommend using a little Pam or vegetable oil before you spoon the dough. But I wouldn't trade how they came out, so it's up to you! 

Not burn spots, just bits of the cakey-cookie that stuck. 

Let these dark, little cookies cool completely and then keep them in the fridge or freezer.


I separated mine with little sheets of plastic wrap so they wouldn't stick to each other.

When I make these again, I will probably switch to parchment paper like an adult.  But otherwise, I am so pleased!  I will definitely make these again!

P.S.  According to my calorie-counting app, where my batch made 12 and 1/2 cookies (one was a baby cookie from scraping the bowl--waste not!), each cookie is about 133 calories.  And those are some pretty good for you calories.  Most come from the chocolate chunks and the honey, which are treats.  But the cocoa powder, egg, and avocado are pretty friendly to our bodies!
