My sweet husband and I had to do quite a bit of adjusting when it came time to smash our lives and our budgets together. Turns out that two small bank accounts = two small bank accounts. To make things work and to stay on the we-still-find-each-other-attractive track, we had to find a sack lunch option that we could assemble in the morning and that didn't make us even more miserable in the middle of a day of studying. The PB&J's were getting too sad.
The solution? Almost Lettuce Wraps. I put lettuce in them, but they are really just regular wraps. Like "lentils," "lettuce wraps" just sound so much slimmer I think.
Ok, the wraps!
We use small, fresh tortillas (the kind meant for actual tacos, not the giant burrito kind), hummus (the best hummus I've ever had to be exact), a head of romaine leaves, veggies, and a little bit of large-curd, cottage cheese (It's cheap and delicious, quit judging. Use whatever the heck kind of cheese or almost-cheese you want for all I care!).
To start, lay down a sheet of saran wrap (if these are being put in a lunch or stored for later). Then, lay down two tortillas. You can use flour or corn (I think I prefer flour, but we've tried both).
Add a hearty smoosh of hummus across the top of the tortillas.
We found the most delicious hummus at Crav takeout in Waco, TX. It is roasted carrot with hints of magic folded in. Needless to say, just switching from sugary jam and fiber bread to this delicious, flavor-packed, guilt-free hummus made a huge difference!
We can't always afford the good stuf made by the talented people, so I plan to attempt some homemade hummus this weekend during a study break - I'll let y'all know how that goes...
Add any other sauce you'd like. In the blurry picture above, I put some "zucchini hummus" that I had made. I'm still working on making this a share-worthy recipe.
TIP: To make you romaine last, wrap a wet paper towel around the base of the stem and then loosely wrap the whole thing in a plastic produce bag from the store. I always grab an extra large produce sack from the potato section to put the romaine in. Switch out the towel every few days. And still try to use it up within about 8 or 9 days.
Place some chopped veggies on top of the hummus. Here I put some sweet, gypsy peppers and then added small tomato slices to mine, but not hubby's.
Break your fronds of Romaine in half and place them so they make an upward "v." These help form the structure of the wraps.
If you so desire (I did!), add a spoonful of large-curd cottage cheese along the lettuce leaf.
Then, fold the little taco/wrap in half and then roll one edge of the torilla over the other. Place the two together (if you do two at once; you can also just do one at a time). Grab the bottom edge of the saran wrap and pull it over the wrap, kind of tucking the wrap in nicely. Roll it up over the rest of the saran wrap and twist close the ends--you've got your lunch!
These wraps are very accomodating; you can put whatever you like in them! I really like starting with the a head of romaine leaves. It costs about $1.50 and lasts us all week. Then we just pile in whatever fresh or leftover veggies or beans we've got (and a touch of that cottage cheese). Super simple, super easy, and NOT a plain old sandwich.
